Pour the Farm Girl Noodle Flour Blend onto a clean work surface and make a well in the centre.

Crack the eggs into the well. Using a fork, gently whisk the eggs, gradually incorporating flour from the edges until a shaggy dough begins to form.

Bring the dough together with your hands and knead until it feels smooth and pliable, about 5–8 minutes. Add water a little at a time as needed - we used about 2 tablespoons - until the dough reaches a consistency that’s easy to knead without feeling sticky.

Tip: The exact amount of water may vary depending on the size of your eggs, so add it gradually rather than all at once.

Form the dough into a ball, cover, and let it rest for about 20–30 minutes. This makes it easier to roll out.

Divide the dough into smaller portions. On a lightly floured surface, use a rolling pin to roll each portion as thinly as you’d like your noodles.

Lightly dust the rolled dough with Farm Girl Noodle Flour Blend, then cut into strips with a sharp knife.

Bring a large pot of salted water to a boil. Add the fresh noodles and cook until tender, starting to check them after about 2–3 minutes. Fresh pasta cooks much faster than dried pasta, and cooking time will depend on the thickness of your noodles.

Drain and serve with your favourite pasta sauce.
