Mini Banana Pancakes

  1. In a mixing bowl, combine the mashed banana (or egg), milk, and melted butter. Stir until smooth.

  2. Add ¾ cup Farm Girl Vanilla Pancake & Waffle Mix and mix until the batter is smooth and slightly thick. If needed, add a splash of milk to loosen the batter.

  3. Slice the bananas into thick rounds and dip each slice into the batter, making sure they’re fully coated.

  4. Heat a lightly oiled non-stick pan over medium-low heat.

  5. Place the coated banana slices into the pan, leaving space between each. Cook for 2–3 minutes per side, or until golden brown. Flip and cook the other side until perfectly golden.

  6. Serve warm with fresh berries, a drizzle of maple syrup, and enjoy.

Makes about 20–25 mini pancakes, depending on banana size.
