Pumpkin Pancakes with Cinnamon Almond Butter

Fall mornings are officially better with a stack of warm pumpkin pancakes. Made with Farm Girl Vanilla Pancake & Waffle Mix and topped with creamy cinnamon almond butter, they’re the perfect cozy fall breakfast.

Ingredients

For the Pancakes

For the Cinnamon Almond Butter

  • 1 tbsp almond butter
  • 1 tbsp Greek yogurt
  • ½ tsp cinnamon

For Serving

  • Pure maple syrup 

Instructions

  1. In a large bowl, mix together Farm Girl Vanilla Pancake & Waffle Mix, pumpkin pie spice, egg, pumpkin purée, milk, melted butter or oil, vanilla and salt until combined.
  2. Let the batter rest for 3–5 minutes. If the batter is too thick, add another splash of milk until it reaches the desired consistency.
  3. Pour the batter into a greased waffle iron and cook until golden and slightly crisp.
  4. Meanwhile, add the diced apples, butter, maple syrup, cinnamon, nutmeg, salt and water to a small pan.
  5. Cook over medium heat for 8–10 minutes, stirring occasionally, until the apples are tender and syrupy. Stir in the vanilla.
  6. Spoon the warm cinnamon apples over the waffles and finish with a drizzle of maple syrup.
