Mis a Place
Dice 1/2 large onion
Dice 1/4 cup of Pancetta/lonza/Prosciutto or bacon
Grate 1/4 cup of pecorino or parmesan
1 Bunch of basil diced
1/4 cup of white wine
1/2 cup of cream
Pasta water as needed
Step 1
Place a large pot of water on the stove and bring to a boil.
Step 2
Place a saute pan on the stove on medium heat, add a dollop of butter, add the onion and pancetta mixture. Saute until translucent
Step 3
Add 1/2 tablespoon of of FG pasta flour to the pan and mix. Cook for 20 seconds or until you start to see browning.
Step 4
Add the white wine and stir. Cook for 30 seconds. Mixture in the pan will start to thicken.
Step 5
Remove the pan from the heat. Add the Cream, pecorino and the diced basil. Check the seasoning may need some salt and pepper. Add more cheese for a deeper flavour.
Step 6
Add the pasta to the water. Should take about 4 minutes. Drain the pasta (save 1/4 cup of the pasta water its a Italian chef trick)
Step 7
Add the pasta to the sauce and return to the heat. Saute for about 20 seconds. (this is a critical step as it makes the pasta absorb the sauce and helps integrate the noodles into the flavour of the sauce.
